Default Cycling In Tuscany

We want to take a cycling vacation in Tuscany, or Tuscany coast, or Puglia. I've been looking at some bike-trip companies (VBT, Backroads, Ciclismo Classico, and Eurobike.) Does anyone have any experience with any of those companies? Or maybe there is another company you would recommend. Any additonal advice would be most appreciated
