Default when to replace a mountain bike tire

I just bought a new set of tires for my mountain bike. I was at the point where I did not trust my old tread to hold anymore on tough courses and during races. Are there any standard ways to know when to replace a mountain bike tire? Would the rules that apply to car tread wear apply there (i.e. height of tread)? I have just been going by my gut feel. However, sometimes I replace things and it makes no difference. Other times it makes a world of different.

The same question goes for replacing rims with rim brakes. When should one replace rims with rim brakes (i.e. when is the wear on the rim enough to worry/care about)?

Re mountain bike tyres, I generally go by when they don't seem to provide traction like they used to..

As for the rim braking surface, most rim companies will specify (either on their website, or ask their distributor etc.) a minimum braking thickness that you can measure with a set of calipers.

Some have a tread wear line in the pattern - when the tread is worn down to the line, its time to change.
