I enjoyed "The Complete Book Of Long-Distance Cycling" by Ed Burke and Ed Pavelka.
Excellent reading and motivational.

I think you can probably trust the Lance Armstrong Training Program book with Chris Carmichael. The 7 week training plan seems to be working awesome so far!
