Default touring route help needed

Hey all, this is my first post on this forum. It looks like the place for the kind of info I need. Next summer I plan on riding from the Columbia River Gorge to Sedona, Az. Any suggestions on bike friendly routes would be very helpful. My wife has done some touring so she will be able to help me with things like how to pack and what to take. My background in cycling is that I ride about 5000 miles a year, mostly training for racing. Been racing for the last two years. Have yet to make it out of the cat. 4/5 but been having fun.

I have wanted to do a solo tour ever since I was a kid, in my mid fourties now, better late then never I guess.
