You could probably just advertise organised rides - maybe early on a sunday morning (I know it will be a bit hard to get uni students moving after saturday night) - You could put up posters, get on the various forums/blogs etc that unis have.
Stop everyone you see on a bike and ask them what they think. Tape notes to their bikes when they are locked in the bike racks with an email address and ask for suggestions, willingness to ride.

Talk to the sport department at your uni and see what they think.

also, what type of club do you want, a recreational riders club, a racing club...?

well we probaly have any racing this year, but that sounds like fun. we were thinking it would be a great way to meet people and always know someone to go ride with. that sunday morning sounds like a good idea and thanks for the advice.

I belong to a recreational club - no races, just rides for fun. I believe this appeals to more people, and there are plenty of other clubs around for racers.

Attached is the website for this club. You might get some tips from this if this is the sort of thing you have in mind.

They have all sorts of rides at all sorts of levels. They have road and MTB, they have short trips at a slow pace, and longer trips at a fast pace. They have century rides and weekend trips. In the off season they have hiking and cross country skiing if you're into that sort of thing.

Good luck to you. This could be the start of something big.
