family cycling in spain??

Hi, I'm new to this forum, but thought I'd try my luck for a bit of advice about cycling holidays in Spain. We live in Australia and my husband and I have done a couple of cycling trips in France and Germany in the past. We have recently had a baby and are contemplating our first family bike trip in Spain in early June next year, when I will be there for business. Our baby will be about 17 months old and we are planning on purchasing a child trailer for this trip. Are we completely mad or is it do-able? Any suggestions on regions and/or routes would be much appreciated. We are both reasonably fit and my husband does a lot of MTB riding, {although don't expect we'll be taking the baby mountain biking :eek: !! }We're after some fairly cruisy rides with lots of options for stopping in villages if things go pear-shaped, as well as avoiding areas with lots of traffic. Any advice or suggestions for online info would be much appreciated. thanks in advance - Sushibelle
