low glycemic index foods??
I am newcomer to the cycling and I have had some problems to maintain the weight . I have 18 months of practice even when I have lost some weight and I have replaced some fat by lean muscle, I am a big overweight with 95 kgms (aprox. 210 lbs) and my height is 1.73 mts. I think my food is OK because is mainly based on green vegetables, tuna fish, chicken, sea food, and integral carbs. I spend at least 10 hours/week training with an average of 8,000 kcals consumed, measured by my HRM, but I can not reduce my weight, instead of, I have a tendency to increase it when I reduce the training intensity, can I have some low metabolism problem? it is possible a thyroid problem??
What do you think about the low glycemic index foods ?? could be better to replace the high carbs foods for low glycemic index foods to avoid the Up/down of the insulin?? (I am not a diabetic)

Not a lot of data in this area. ADA doesn't even bother. Go for the fiber they might tell you. In general, it sounds like you eat fine. And train well.
I think to loose some weight you need to train your body differently. Make your body want to be more efficient with less mass and it will. Weight bearing activities you could include on the bike are hills, hills, hills, and then go do some hills. Off the bike consider running.

The low glycemic index approach has some merit. My wife has us both on that approach right now. I am a Type 2 diabetic, but we are both trying it for weight loss. All I can say is that it has helped with my blood sugar.

Have you seen a doctorif you are this concerned?
Increasing the intensity rather than reducing the intensity will help you loose weight, as it will increase the calories used during the session.
The amount of calories used against calories consumbed is more important in weight loss than where these calories are from. Obviously the source of the calories is important in terms of health.
