I bought myself some polar fleece from the local fabric shop and made a headband with "flaps" to cover my ears. The flaps get held in place by the straps of the helmet .... works fine.

I just rearrange my hair so that it covers my ears as it's pulled back into my ponytail. You might want to try that if your hair is long/thick enough

Several companies make things specifically for ears. Here is an example of one that works great under helmets. http://www.rei.com/online/store/ProductDisplay?storeId=8000&catalogId=40000008000&productId=48028672&parent_category_rn=40003704&vcat=REI_SEARCH
